EMSY AT HOME
Ingredients
2 cups - Warm Water (110-120*F)
2 tbsp - Active Dry Yeast
2 tsp - Sugar
5 cups - Bread Flour
1 tsp - Kosher Salt
2 tbsp - Honey
3 tbsp - Olive Oil
1 tsp - Cornmeal
Preparation
1. In a large bowl, combine yeast, warm water and sugar. Stir and cover with a tea cloth. Let et rest for 5-10 minutes until bubbly.
2. Add flour, salt and honey to the large bowl. Use hands to mix slowly until a dough is formed.
3. Clean a flat surface and dust with bread flour.
4. Knead dough using stretch and fold technique for 5 minutes.
5. In a clean bowl, coat the sides with olive oil. Place dough in bowl and drizzle oil over bread. (Oil will act as a barrier to keep the dough from developing a crust as it proofs).
6. Cover the bowl with plastic wrap or a tea towel and allow it to rise for 1 hour.
5. Drizzle dough in olive oil. Cover bowl and let rise for 1 hour.
7. Punch down dough and place on lightly floured surface. Divide into two portions. Use a rolling pin to roll out dough to roughly a 10-12 inch by 6 inch rectangle
8. Roll dough into loaf shape, pinching sides. Place dough on oiled baking tray and coat with cornmeal. You should have 2 loaves.
9. Preheat oven to 450*F.
10. Allow dough to rise for 30 minutes near warm oven. (Careful, do not place dough so close to the oven that it will start to cook).
8. When risen, score the top of the French bread loves. Bake for 20 minutes or until golden brown.
10. Allow 10 minutes to cool before serving!
