Pumpkin French Toast

Ingredients

2 - Eggs

1/3 cup - Whole Milk

1/4 cup - Pumpkin Puree

1 tsp - Pumpkin Pie Spice

1 tsp - Ground Cinnamon

2 tsp - Vanilla Extract

1 tsp - Sea Salt

4 Slices - Bread (I prefer to use my homemade sandwich bread, but you can also use white bread, Texas toast, French bread, etc.)

Preparation

  1. Heat a large skillet over medium heat. Melt a small amount of butter to ensure pan is no-stick.

  2. In a large bowl or baking dish, add eggs, milk, pumpkin puree, pumpkin spice, ground cinnamon, vanilla extract and sea salt. Whisk vigorously.

  3. Dip your bread slice into the mixture, coating both sides. If needed, allow bread to sit in mixture momentarily to soak a little. Remove bread before it gets soggy.

  4. Place the bread on the warm skillet and allow it to cook for 2-3 minutes on each side. You'll know the slice is done, when it removes easily and has a golden finish.

  5. Place French toast on a plate and cover with a tea towel or aluminum foil and repeat the process with the rest of the bread slices.

  6. Top with powdered sugar, butter and warm maple syrup. Enjoy!
